Quinoa, which is generally considered a grain, is actually a seed! The particularity of this food comes from its nutritional value which is rather different from other typical starchy foods such as rice or couscous. The recent popularity of quinoa among nutrition experts can be explained by various factors:

Quinoa can be eaten hot or cold. Try it in a salad with nuts, dried fruits and vegetables of your choice for a quick, simple and healthy lunch. It also freezes easily.
Directions: Rinse quinoa with a fine sieve before cooking, using a ratio of 2 cups of water to 1 cup of quinoa. Simmer about 15 minutes until the liquid has evaporated.
