Soft, Nutritious and Protein-Packed Cookies

Ingredients (Makes about 12 cookies)
- 1 egg
- (or vegan option: 1 tbsp ground flaxseed + 2 tbsp water, let sit for 5 minutes)
- 1/2 cup creamy almond butter
- 1 tbsp maple syrup
- 1 tsp almond extract
- 1 cup rolled oats
- 1/2 cup coconut sugar
- 1 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/2 cup vegan chocolate chips
- 1 tbsp pumpkin protein powder
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix the egg (or flax egg), almond butter, maple syrup, and almond extract.
- Add the oats, pumpkin protein powder, coconut sugar, baking soda, cinnamon, and salt. Mix well — the dough will be soft.
- Using slightly wet hands, form small balls and place them on a baking sheet lined with parchment paper, leaving space between each.
- Gently flatten each cookie.
- Bake for 10 to 12 minutes, until lightly golden.
- Let cool before serving.
