These carrot cake energy balls are a delicious and healthy snack made with wholesome ingredients like nuts, dates, and grated carrots. Infused with warm spices and boosted with pumpkin powder, they’re perfect for a quick energy bite, meal prep, or a nutritious treat on the go.
Ingredients (Makes about 15 balls)
- 1/2 cup almond flour
- 1 tbsp pumpkin powder
- 1 cup pecans
- 1 cup almonds
- 6 dates
- 1 cup grated carrots
- 1 tbsp maple syrup
- 1 tsp cinnamon
- 1 tsp ground ginger
- 1/4 tsp nutmeg
- 1/3 cup unsweetened shredded coconut
Instructions
- In a food processor, add the almond flour, pumpkin powder, nuts, and dates. Blend until the mixture is finely chopped.
- Add the grated carrots, maple syrup, cinnamon, ginger, nutmeg, and shredded coconut.
- Blend again until a sticky dough forms.
- Shape into small balls using your hands.
- Store in the refrigerator for a few weeks or freeze for longer storage.
