Healthy, Crispy and Flavorful Plant-Based Falafels
Looking for a simple, nutritious, and delicious vegan recipe? These pea protein falafel patties are packed with plant-based protein and fresh herbs. Perfect for wraps, bowls, or healthy snacks, they are crispy on the outside and tender on the inside.
Ingredients (Makes about 12 small patties)
- 1 can chickpeas, rinsed and drained
- 1 garlic clove, minced
- 1 French shallot, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh parsley, chopped
- A few mint leaves, chopped
- 1 tbsp ground coriander
- 1 tbsp ground cumin
- 1 tsp baking soda
- 1 tbsp chickpea flour
- 2 tbsp pea protein powder
- 1/2 tsp salt
- Olive oil (for cooking)
Instructions
- Preheat the oven to 400°F (200°C).
- In a food processor, combine all ingredients and blend until you get a smooth mixture with a slightly coarse texture.
- Shape into about 12 small patties using your hands.
- Lightly brush each patty with olive oil.
- Place them on a baking sheet lined with parchment paper.
- Bake for 15–20 minutes on each side, until golden and crispy.
- Let cool slightly before serving.
Vegan Yogurt Tahini Sauce
Ingredients:
- 1/2 cup plain vegan yogurt
- 2 tbsp tahini
- 1 tbsp finely chopped cilantro
- 1 tbsp lemon juice
- 1 small garlic clove, minced
Instructions:
Simply mix all ingredients until smooth and creamy.
